Italiano: Zangola verticale a cilindro o a pistone, costituita da un contenitore per la panna, ricavato da un unico pezzo di legno e rinforzato con una doppia cerchiatura in ferro, in cui scorre un'asta con rotella. Questa, mossa su e giù come un pistone, sbatteva la panna fino alla burrificazione. La piccola zangola verticale rispecchia la tipologia più antica, ampiamente diffusa nel XVII secolo, impiegata per produzioni di burro casalinghe con piccole quantità di latte, nelle zone montane dove non vi erano caseifici. Nei caseifici le dimensioni erano maggiori e più tardi si diffuse il tipo orizzontale corto e largo “a botte. |
