Italiano: Strumento usato per controllare la maturazione della forma: l'esperto battitore percuote la superficie e percepisce dal suono emesso se la pasta è compatta o se presenta cavità interne, segno di stagionatura imperfetta. Impugnato al contrario, l'attrezzo può essere usato anche come succhiello per estrarre dalla profondità della forma un minuscolo cilindro di formaggio allo scopo di verificarne la qualità e lo stadio di stagionatura.
