Hello Olevy, my sources are all gathered in the two tables in en:Legal aspects of ritual slaughter. The most important two sources are Legal Restrictions on Religious Slaughter in Europe from the Library of Congress and the DIALREL factsheet Legislation on religious slaughter. While the former source appears to be rather up to date, the latter source was produced between 2006 and 2010 (the exact date is unknown, but the DIALREL project –officially funded by the EU– ran in those years), and some data in it appear to be out of date by now. But for many countries it is the best source I've got. There are a few countries missing from those two datasets, and whenever I've got a more recent reliable source than DIALREL, I replaced the latter by the former. Color codes in legend

After observing a high divergence between the dark Green in the legend and the related color in the map, I extracted the colors currently used in the image, as can be seen here:
