Description
English: A few cm3 of water was added to about 10 cm3 of burning cooking oil in a crucible. This caused a huge explosion, because of several facts. First and foremost: water cannot mix with oil, since water consists of polar molecules while oil made of non-polar molecules. Secondly, water has a greater density than oil, so it will descend to the bottom of the crucible. And last but not least: water's boiling point is only 100 degrees Celsius while the burning oil's temperature is more than a few hundred degrees Celsius. Because of these, the water poured into the burning oil will instantly boil, vaporize and expand, thus generating a lot of steam. The large amount of water vapour ejects the already burning oil into the air increasing its surface area dramatically so its combustion can take place much faster. The result is the explosion visible on this picture which was made in a collaboration with my colleague, Ildikó Radnai. This demonstration illustrates in a dramatic way why we should never try to extinguish the flames of burning cooking oil with water.
Magyar: Néhány cm3 vizet adtam mintegy 10 cm3 lángoló étolajhoz. Ez egy hatalmas robbanást okozott, ami több dologgal magyarázható. Először is: a víz nem elegyedik az olajjal, hiszen a víz poláris, míg az olaj apoláris molekulákból áll. Másrészt, a víz sűrűsége nagyobb az olajénál, így a víz lesüllyedt az olaj alá. Végül és nem utolsósorban, a víz forráspontja csupán 100 °C, míg az égő olaj hőmérséklete néhány száz foknyi. Ezek miatt az égő olajra öntött víz azonnal felforr, gőzzé válik, kiterjed, ekképp rengeteg vízgőz szabadul fel. Ez a vízgőz a levegőbe repíti az eleve égő olajat, amelynek így drámai módon megnő a felülete, így az égésének a sebessége is jócskán megnő. Ennek az eredménye a robbanás, amelyet megörökítettünk a képen Radnai Ildikó kollégámmal. Ez a demonstráció drámai módon mutatja be, hogy miért ne próbáljunk vízzel égő olajat oltani.
