Description
Español: En la región francesa del Jura se elaboran estos Comtes, quesos con 12, 24 o 36 meses de afinación. El que vamos a probar este mes cuenta con 12 meses de afinación. Es un queso con una corteza natural de color marrón, debido a que se frota con agua y sal durante al menos 4 veces por semana. Su textura es inconfundible: compacta y firme sin ojos de ningún tipo y de color toffee. El aroma es fino y elegante y destacan en él, las sutiles notas lácticas con toques florales. Uno de los quesos más vendidos actualmente en Francia. Fino y fundente en el paladar, con notas acarameladas y a leche fresca y con sutiles pinceladas a madera o café.

Tipo de leche: cruda de vaca. Procedencia: región del Jura, Francia.
