English: Ingredients for the very popular and nutritious African recipe: Mbika na mbinzo'. 'Mbika (pumpkin or squash seed flour porridge), (grain de courges moulu) combined with 'Mbinzo' (caterpillars) is a very popular central Africa recipe that includes familiar ingredients such as fresh onions, tomatoes, capsicum, green onions, garlic and parsley plus a flour made from dried, ground edible seeds from in-season Cucurbitaceae (watermelons, pumpkins.gourds, squashes). Different varieties of edible caterpillars can be used, depending on the season. In this case, a plate of dried Imbrasia truncata from the Kinshasa market. Congo. |
