Summary[edit]

Description
English: A sourdough bâtard that uses wheat bran and germ as inclusions to achieve the same ratio of bran to germ to endosperm as whole wheat flour without having its gluten inhibiting effects. This technique was created and dubbed, “Compleat Wheat” by Modernist Bread.
