Summary[edit]

Description It was nice and tender, though not as gamey as I was hoping for. I managed to start early enough to make really deep walnut brown onion gravy, finished with a slosh of dry sherry and a tablespoon of crab-apple jelly. Stovies (made with home-grown Desiree potatoes) and buttered curly kale on the side... TISSM, yum. And there was plenty of meat left on the carcass so it's now making some real stock as the basis of a game soup to precede this evening's roast lamb :-)
