Government Dairy Schools. By these methods a superior and uniform product is secured. The development of the cheese industry in Ontario has been remarkably continuous and rapid. In 1864 the first factory was erected. Prior to that time about 3,500,000 lbs. were made annually in the farm dairies. Since then the growth has been as follows : — 1871—Amount made in factories 12,500,000 lbs. 1881— 35,000,000 1891- 81,924,042 l895— 109,230,340 l899— 123,324,000 < The value of the product of the factories for 1899 was $12,121,000. The year 1900 shows still greater strides, being the greatest that the cheese tiade of the Province has ever experienced. The amount of Canadian cheese, of which probably two-thirds comes from Ontario, exported to Great Britain in 1895 was 117,230,048 lbs., (40)

The butter industry is not so far advanced as the cheese manufacture,chiefly owing to the lack of proper facilities for placing- the product on theworlds market in prime condition. Ontario is capable of pro-Butter, during as fine a quality of butter as is produced anywhere, andwith the proper means of manufacture, packing- and transporta-tion, is begining to compete successfully in the British market. The numberof creameries operated in 1898 was ^2^, the total amount of butter producedbeing estimated at over 9,000,000 lbs. at an average value of 19.16 centsper pound. Many cheese factories are now making butter during the winterseason, and cheese during the summer, and the number of creameries issteadily increasing.
