This map is not accurate. The definition of Acadiana ("Cajun Country") is too big. St. Charles Parish and St. John the Baptist Parish in particular are not part of Acadiana. They are 100% part of the New Orleans area.

I used to play golf in St. Charles Parish and you could literally see Louis Armstrong International Airport the whole time. Beyond geography, those parishes just aren't part of Cajun Country from a cultural standpoint. You're far more likely to hear the "Yat" accent there than the Cajun "flat" accent. In fact, I'd say the former is very widespread, while the latter is almost never heard.

In terms of cuisine, St. Charles and St. John the Baptist parishes can be identified as New Orleanian in the way they prepare boiled crawfish. Cajuns sprinkle the spice on the outside of the crawfish; New Orleanians include it in the water of the boil, and that is most definitely how it's done in St. Charles and St. John the Baptist parishes.
