nd finish, 8. In agood Cheddar the flavour is mild and pleasingrather than strong and acidy. It can be de-scribed only as a characteristic Cheddar cheeseflavour. The texture is smooth and close, com-paratively free from all forms of openness. Itis moderately dry yet not crumbly, and plasticyet free from stickiness. The colour varies inintensity according to the demand of the particu-lar market, but is bright and uniform through-out, not mottled or discoloured in any way.The appearance and finish refer only to the ex-terior. The cheese is symmetrical in form, ofa fashionable shape and size, and has a smoothclean surface and neat edges, so that the appear-ance generally is neat and attractive. The making of cheese may be a very simpleprocess, accomplished by anyone without specialtraining and with only crude appliances. Toa certain extent it is a natural process.
