Copyright, 1900, bj- M. A. & K. M. Heinzer. SPONGE CAKE. 52 Sponge Cake. i cup of sugar.I cup of flour. KOW TO MIX. Beat eggs and sugar for lo minutes (with an eggbeater), then add in the flour and mix very Hghtly. HOW TO BAKE. A hot oven is required if baked in small tins, but ifbaked in large ones an orven is required similar to poundcake. For large ones grease pans and place paper around the?sides and bottom, but for small ones grease pans well anddust the bottoms with flour. Sprinkle a little pulverizedsugar over the top of them before placing themi into theoven. This will make one 15-cent sponge cake or 18 smallones. Beat the sugar and eggs over a slow fire (with an eggbeater) until lukewarm, but beat them lighter than, forsponge cake, then add in the flour and mix gently. Place ahalf-inch tube into an ornamenting bag and put the mixtureintO it, then press it through the tube OU brown or whitepaper, the size of a finger, i inch apart. When paper isfull, sprinkle pulverized sugar over the top of the fingers,then shake the sugar ofif and place the paper and ladyfingers on a pan. Bake in a hot oven. These will bake in 5 minutes. HOW TO REMOVE THEM AFTER BAKED. Place the fingers on a table, with paper side up, andwash the paper with enough water to remove them with-out breaking them, then take them from the paper andplace them together while damp. This will make 20 fingers. THE WAY TO MAKE FANCY LADY FINGERS. Press the mixture through the tube on brown or whitepaper i-J
