er together 2 minutes until creamy,then add in the eggs and rub 2 minutes. Dissolve soda inmilk and add it to the mixture, then add in the fiour andcream tartar and mix thoroughly. Grease a flat pan andplace paper on it, then spread the mixture on it one-fourthof an inch thick, and bake in a moderate oven. If chocolatelayer is desired, dissolve a piece of chocolate the size of amarble and add it to one-half of the mixture, then spread itone-fourth of an inch thick on a greased pan, with paper onit, and bake in a moderate oven. When baked, turn it overon a table, with paper side upward, and remove the paper,then spread one layer with jelly and place the other layeron the top of it. These diamonds can be spread over thetop with jelly and cocoanut strewn over the jelly and thencut in squares or diamond shape, or they can be iced withchocolate or boiled vanilla icing and strewn over the topwith cocoanut. HOW TO MIX. Rub almond paste and 2 whites of eggs together 3 min-utes, then add in the balance of the eggs and rub the sameas before, then add in the sugar and rub i minute, thenadd in the flour and cinnamon and mix thoroughly. Dusta table lightly with flour and place the mixture on it androll it long and i inch in diameter with the hands, thenflatten it down 2 inches wide and one-fourth thick, then iceover the top with icing, the same as used for ornamenting(but not soi thick), so it can be spread easily, then cut ofifpieces three-fourths of an inch wide and place them on agreased pan, dusted with flour, i inch apart, and let themstand until thoroughly dry (4 hours).
