Copyright, 1900, by M. A. & K. M. Heinzer. LEMON CRACKERS. 38 Lemon Crackers. •J cup of water. f cup of sugar. ■J cup of lard. 4 cups of flour. I teaspoonful of grated ammonia. ID drops of lemon extract. HOW TO MIX. Dissolve ammonia in the water and add in the extractand sugar. Rub flour and lard thoroughly together andadd it to the mixture, then mix well. Place the mixtureon a table and roll it about one-fourth of an inch thick witha rolling-pin and cut them out with a round cutter. Placethem on a greased pan i inch apart. Bake in a moderate oven. HOW TO MIX. Rub sugar, butter and ammonia together about I min-ute, then add in the eggs and rub the same as before, addin the milk and mix, then add in the flour and currants andmix thoroughly. Place the dough on a table and breakoff a portion of it and roll it long and i inch in diameterand break off small pieces the size of a walnut, then placethem on a greased pan 3 inches apart and flatten them outabout the size of a silver dollar with the palm of the hand,then flatten them out a little larger with a fork.
