Copyright, 1900, by M. A. & K. M. Heinzer. GERMAN TEA CAKE. German Tea Cake. 1 cup of sugar.i cup of milk.4 cups of flour. 2 eggs. 3 tablespoonfuls of butter. 1 teaspoonful of soda. 2 teaspooufuls of cream tartar. HOW TO MIX. Rub sugar, butter and soda together 2 minutes untilcreamy, then add in the eggs and rub the same as before,add in the milk and mix well, then add in the cream tartarand flour and mix thoroughly. Place the dough on a tabicand cut it in 11 pieces and form them round with the hands,then place them on a greased, flat pan 4 inches apart andflatten them down, then press the back of a knife on thetop of them and form diamonds. Before baking sprinklepulverized sugar over them. Bake in a moderate oven. This will make 11 cakes. They will bake in 15 minutes. Copyright, 1900, by M. A. & K. M. Heinzer. 73

Rub sugar, butter and soda together 2 minutes, add inthe eggs and mix, then add in the milk and mix well, thenadd in the flour, cream tartar and meal, and mix thorough-ly. Bake in muffin tins.
