The starch is of a fine colour,and has a most agreeable flavour ; mixed witli warmwater i^produces a fine transparent paste. The methodof preparing the two other kinds of starch from the rootsof the Dogs-tooth Violet and the Fern—the former ofwhich merits special mention for its qualities—does notpresent any peculiarity. Both form articles of food, butthe Fern starch is also used in various industries, as itproduces a very strong paste, called shibu, on beingcarefully mixed with the sap of unripe Persimmons. Thefibres of the Fern root, after the starch has been washedout, are made into ropes, which are used in the mudwalls of the buildings, so as to afford a better hold forthe loam. It may be added that the manufacture ofstarch-sugar has long been known in Japan. Millet andRice are used for this purpose, and after being steamedthey are mixed with a certain quantity of malt or ferment,
