| Description |
English: "Moulding the dough" perhaps is not the best title for this image. This gentleman (I guess Syrian, only speaks Arabic) is making khubz at a food market in Ankara. Since millions of Syrians fleeing the Civil War took refuge in Turkey, and scattered to all major cities, we Turks kind of began to learn a new culture. "Boiled chickpeas for hummus", falafel, Syrian style künefe, etc. This live "khubz" preparation is the latest novelty. I had seen a real subterranean "tandır" (tandoor) in Pakistan and watched the local bread ("chapati) guy almost half an hour, enchanted. They use this pillow-cushion like thing to open, extend or widen the dough on it just before it goes into the oven. Once I bought khubz in Syria at the bread shop, but they only had a classical bread oven. I guess they make khubz differently at bigger cities like Damascus. In the end, here we have someone making -supposedly- Syrian flatbread but reminds me of what I saw in Pakistan. All in all, the freshly baked bread is always delicious. At this case, 1 TL each. |
