The first is, of course, themagnificent chateau and the other the deliciouscheese wrapped in lettuce leaves and served witha sauce of kirsch which we had with our coffeeat the Grand Hotel de Blois, The chateau wassuperb, the cheese a gastronomic inspiration, and the two will go galloping down the corridorsof our memory whenever Blois is mentioned. So many descriptions by noted and able wri-ters have been given of this most famous of allthe French chateaux that I shall not attempteven to tell of our admiration of this magnificentpile which stands as an everlasting monumentto its great founders and architects. We ran for miles throiigh the maQnificentforests of Fontainebleau. just as the smi was be-ginning to cast its longest shadows. Jfrom Wonv^ to ^aris; and reached the forest of Fontainebleau aboutsunset, so that we had a half-hours ride throughthe labyrinth of its roads at the most delightfulpart of the day. This famous forest, which isthe most beautiful in France, and probably themost perfect of any in Europe, has been underGovernment supervision and management forgenerations. It covers 42,500 acres, an areafifty times as great as Central Park in NewYork City, and crossing and recrossing in everydirection are innumerable roads, varying frombeautiful boulevards to the narrowest bridlepaths, all kept in most perfect condition. In the city of Fontainebleau, which is almostin the center of this vast forest, we selected theHotel de France et dAngleterre as the best oneat which to stop. This hotel is directly oppositethe palace, and is one of the most attractivepublic houses in all of France
