Mbika na Mbinzo - very popular and nutritious recipe. 'Mbika' (grain de courges moulu),(pumpkin or squash seed flour porridge) combined with 'mbinzo' (caterpillars) is a very popular central Africa recipe that includes familiar ingredients such as fresh onions, tomatoes, capsicum, green onions, garlic and parsley plus a flour made from ground edible seeds from in-season Cucurbitaceae (watermelons, pumpkins.gourds, squashes). Different species of edible caterpillars can be used, depending on the season. In this case, a plate of dried Imbrasia truncata from the Kinshasa market. Congo. |
