Description
English: Mangalorean Kadle (black chickpea)Recipe is a divine combination of black chickpeas that is tossed with lots of coconut,garlic and homemade spice blend.The above picture is taken in my home kitchen where I prepared the same to have with boiled rice . The amazing flavour and taste of the Kadle comes from from two main things which is the roasting of the coconut with onions till it becomes golden brown and the homemade masala blend.Then a seasoning of mustard seeds,curry leaves and crushed garlic is fried in coconut nut and added to the sukka which gives it a delicious aromatic flavour.This dish is rich in fiber and provides 13 grams of dietary fiber. Kadale Ajadina is ahigh-fiber diet lowers your cholesterol levels and helps prevent constipation. This dish also helps regulate blood sugar levels in people suffering from diabetes. Kala Chana is also rich in calcium and iron. The vitamin C in kala chana helps improve the absorption of iron in the blood.Overall this traditional dish is not only delicious put provides abundant health benefits. Traditionally prepared in Manglorean homes another variation to it is adding tindora and cashew nuts to Karale Ajadina dish which is a special item on Vishu or Bisu the Tulu or Manglorean new Year Day .
