Maltese Traditional Honey Rings Recipe

Ingredients for the pastry

400 g flour 100 g butter 75 g semolina 1 egg yolk 1 tablespoon sugar Water as needed

Ingredients For the filling

400 g treacle 150 g sugar Grated rind of an orange Grated rind of a lemon 1 tablespoon mixed spice 1 tablespoon cocoa 1 tablespoon anisette liqueur 1 tablespoon semolina 4 whole cloves 2 cups of water

Method for pastry: In a bowl, mix the flour with the semolina, butter, sugar and the egg yolk. Mix well and work into dough, add water if needed.

Method for the filling: Mix all the ingredients except for the semolina in a saucepan and simmer. Gradually add semolina to the mixture and mix until it thickens. Remove from heat and let the mixture to cool.

Making the honey rings: Roll out the pastry into a long thin strips, put some of the filling in the middle and roll the pastry over the filling to form long tubes. Bring the ends of each tube together to form into rings. Now, using a sharp knife, cut short slits into the pastry at intervals. Put the rings into a baking tray and bake in a moderate oven for around 20 minutes or until the pastry is golden brown.

Honey rings are an other Maltese traditional dessert.
