Al publicar sus acuarelas en 1820, Emeric Vidal incluyó el siguiente comentario referido a esta acuarela:
“Existen en Buenos Aires cuatro mataderos, o carnicerías públicas, una en cada extremo y dos en el centro de la ciudad. (...) Para un extranjero, nada es tan repugnante como la forma en que se provee de carne a estos mataderos. Aquí se matan los animales en un terreno al aire libre, ya este seco o mojado; en verano cubierto de polvo, en invierno de barro. Cada matadero tiene varios “corrales” que pertenecen a los diferentes carniceros. A ellos son conducidos desde la campiña los animales, después de lo cual se les permite salir uno a uno, enlazándolos cuando aparecen, atándolos y arrojándolos a tierra donde se les degüella. De esta manera los carniceros matan todas las reses que precisan, dejándolas en tierra hasta que todos están muertos y empezando después a desollarlos. Una vez terminada esta operación, cortan la carne sobre los mismos cueros, que es lo único que la protege de la tierra o el barro, no en cuartos, como es costumbre entre nosotros, sino con un hacha, en secciones longitudinales que cruzan las costillas a ambos lados del espinazo, dividiendo así a la res en tres pedazos largos que son colgados en los carros y transportados, expuestos a la suciedad y el polvo, a las carnicerías que se hallan dentro de la plaza”.
