| Description |
English: Chhana-r Malpua or Chhena ka Malpua served with Rabri. The difference from the usual Malpua or Malpoa is that this is very soft (literally melting in the mouth) as opposed to the usual crispy variety. The reason it is so soft is that it is made almost entirely of Chhena or Chhana which is the soft Indian cottage cheese, which when pressed and hardened becomes Paneer. Usual Malpua is made of other ingredients and rarely contains Chhana. Since it is so soft, it is very difficult to make. This particular photo was taken at Sigree located in Adyar Chennai. |
