Description
Español: Efecto del agua actuando como disolvente dada su capacidad de formar uniones puente de hidrógeno con otros compuestos. El agua en su estado líquido posee una estructura dinámica dado que los enlaces de hidrógeno se rompen y forman nuevamente en cuestión de milésimas de segundo; permitiendo la retención o liberación de la sustancia en el medio. De esta manera el agua puede "competir" con las uniones de las redes ionicas (como sales) o de muchas moléculas orgánicas no ionicas pero polares (como el azúcar), disolviéndolas.
