Description
Italiano: Classificazione dei grassi alimentari. I grassi alimentari sono disponibili in una varietà di forme e sono classificati in base alla presenza di doppi legami mentre gli acidi grassi insaturi (UFA) contengono doppi legami. Gli UFA sono sottocategorizzati in base all'orientamento, al numero e alla posizione dei doppi legami. Cis i grassi contengono doppi legami cis-orientati e sono naturali, mentre trans i grassi contengono doppi legami orientati trans e sono solitamente sintetici o elaborati. Gli acidi grassi con un doppio legame sono i MUFA, mentre i PUFA contengono più di un doppio legame. Infine, gli UFA possono essere ulteriormente classificati in base alla posizione del doppio legame catena-terminale. Per esempio, gli omega-3 PUFA contengono un doppio legame 3-carboni di distanza dal carbonio terminale sulla coda degli acidi grassi. I PUFA sono generalmente considerati sicuri e benefici; ma ciò dipende dalla potenza, dalla concentrazione e dall'ossidabilità. HFD, dieta ricca di grassi
