Alicia and I went to the gym after I was done with work, but, alas, the gym was closed - so we made dinner instead. Recipe: -1/2 lb. linguine -1 can Italian diced tomatoes -3 cloves garlic -1 tablespoon olive oil -oregano & basil (eye ball it) -1/4 cup Parmesan cheese -1/4 cup balsamic vinegar 1) boil pasta 2)while pasta is boiling, sautee garlic in olive oil. 3) When pasta is nearly finished, add can of tomatoes, balsamic vinegar, oregano, basil and Parmesan cheese to the sauteed garlic, Heat through. 4) toss pasta in sauce until coated & serve. so simple and SOOO good. We ended up using a bit more (1-2 tablespoons each) Parmesan cheese and balsamic vinegar. 347/365 View On Black |
